Shrimp and Grits

 

Shrimp and Grits

1 cup stone –ground grits

Salt and freshly ground black pepper

2 tablespoons of butter

1 pound of shrimp, peeled and deveined

½ pound of bacon, chopped into small pieces

1 tablespoon of lemon juice

2 tablespoons of scallions

2 teaspoons of Worcestershire sauce

1 clove of garlic, minced

 

In saucepan, boil 4 cups of water. Add the grits, salt and pepper to taste. Reduce heat to low and stir well. Stir occasionally for 10-15 minutes. Remove from heat and stir in the butter. Keep covered.

In skillet, fry bacon until browned, remove and set aside the bacon and remove half the amount of residual grease. Add shrimp, scallions, garlic, lemon juice and Worcestershire sauce (salt and pepper to taste) over medium heat for about 3-4 minutes.

Pour grits into bowls. Scoop shrimp mixture over grits. Garnish with bacon bits and scallions.

Serves 4-Tips- If you can’t find stone ground grits you can use instant grits as a good substitute.
