Regina Cookies
1 1/2 cups of Sugar
1 1/2 cups of shortening or lard
3 eggs
4 ounces of water
1 teaspoon of baking ammonia
2 pounds of cake flour
2 ounces of vanilla
1 teaspoon of lemon extract
1 ounce of honey
3 cups of sesame seeds
In mixer add sugar, shortening, vanilla, baking ammonia, lemon and honey. Mix on low speed for 2 minutes. Add eggs and water and mix for another 2 minutes. Add flour and mix for another 2-3 minutes. Portion the cookie dough out with a tablespoon size scooper. In a separate tray, add the sesame seeds and 1 cup of water to make sort of a mush. Roll the cookies in the sesame seed mixture to coat well while shaping into 2 ½”, mini-football shapes with rounded edges. Place cookies on a parchment lined cookie sheet. Bake at 400 degrees for approximately 30-40 minutes.
