Quiche
8 large eggs, lightly beaten
1 cup of heavy cream
½ lb of bacon, diced
¼ lb of provolone cheese, diced
1 small onion, diced
1/8 teaspoon of salt
1/8 teaspoon of black pepper
1 tablespoon of Pecorino Romano cheese
½ Serrano chile, diced (more or less to taste)
1 link of Italian sausage, (casing removed)
2 9-inch frozen, unbaked pie crusts, thawed to room temperature
Pre-heat oven to 400 degrees. Cook bacon in skillet until crisp and remove. Add nuggets of sausage to pan and cook thoroughly. Remove sausage. Discard all pan dripping except for 3 tablespoons. Add onions and caramelize for 10 -12 minutes. Remove onions.
In bowl, whisk eggs, cream, salt, pepper, Serrano peppers, sausage, bacon, provolone, pecorino cheese, and onions. Divide into the two pie crusts. Place in lower third of oven for 25-30 minutes. Let cool to room temperature before cutting into wedges.
