Pignoli Cookies
1 pound of almond paste
1 ½ cups of sugar
3 egg whites
1 cup of pine nuts
Pre-heat oven to 350 degrees. Beat almond paste with electric mixer into fine crumbles. Sprinkle the sugar over the almond paste and continue to beat until well incorporated. Beat in egg whites, one at a time, until the batter is smooth.
Roll one tablespoon of batter into a ball in between your palms. Roll the ball firmly in a plate of pine nuts to make the nuts adhere to the batter. Place on a parchment- lined baking sheet and press down to gently flatten.
Bake cookies until lightly browned yet soft for about 15-18 minutes. Remove and cool on a wire rack.
