Frittata

12 eggs

1 tablespoon of milk

1 tablespoon Pecorino Romano Cheese

1/4 teaspoon freshly cracked black pepper

1/4 teaspoon salt

1 tablespoon butter

2 boiled potatoes, peeled and cubed into 1″ pieces

1 bell pepper, cubed and sautéed in a touch of olive oil

 

Preheat oven to broil setting.  Scramble together the eggs, milk, cheese, salt and pepper.  Heat a 12 inch non-stick, oven-proof frying pan over medium heat.  Melt butter and add potatoes and pepper mixture.  Saute for 2 minutes.  Add eggs and let cook for 6-10 minutes, or until egg mixture is 3/4 set.  Place pan in oven and broil for 3-5 minutes until lightly browned and fluffy.  Remove, loosen sides with a rubber spatula and turn over onto a plate.
