Cheesecake w/ Sour Cream Cap

3- 8 oz packs of cream cheese, room temperature

3/4 cup sugar

1 1/2 teaspoons vanilla

3- eggs, beaten

Crust

1 1/2 cups graham cracker crumbs

3- tablespoons of sugar

3- tablespoons of melted butter

Sour Cream Cap

1- pint od sour cream

1/2 cup sugar

1 1/2 teaspoons vanilla

  1. Heat oven to 325 degrees.
  2. Mix crumbs, sugar, and melted butter. Press into greased 9″ spring pan and bake for 10 min.
  3. Mix cream cheese, sugar, vanilla, and eggs for five minutes so well incorporated.
  4. Pour mixture into crust and bake for 55 minutes.
  5. Mix sour cream, sugar, and vanilla well. Remove cake and carefully add sour cream topping and place back in oven for another 10 minutes. Let cool in fridge unwrapped for several hours. Remove ring of pan, wrap in plastic wrap overnight. Bon Appetito!
  6. Tip: I keep hot water bath in oven on lower shelf under the cake while it’s baking. And I bake the cake in the middle of the oven.
